She defended it (when no one else would) in the infamous American beef feud with Oprah in the late 1990s. Now she looks after beef sustainability for OSI group (supplier to McDonald’s) and believes large scale beef production is key to global food sustainability.

She knows it’s a controversial view, but argues it’s only the big brands that have the power to impact entire supply chains.
